A small herd of LaMancha dairy goats browse our organic hillside all year long. The does are carefully hand-milked twice daily during the milking season. Hand-milking preserves the integrity of the milk and allows the "terrior" to shine through in the finished cheese product.
Our cheese is a reflection of a healthy, happy goat herd as well as a dedication to traditional cheesemaking techniques.
